This course is designed for organic growers and produce handlers who are new to Global Food Safety Initiative (GFSI) standards, staff members who need training in food safety, and organic professionals who need to update and improve their food safety program and/or documentation.

The two-day workshop will prepare you for the new GFSI-benchmarked food safety certification offered by CCOF. The training will utilize the GLOBALG.A.P. Integrated Farm Assurance (IFA) standards and the Harmonized Produce Safety Standard (HPSS) for North American suppliers.

Participants will learn:

  • The key elements of a food safety plan and risk assessments
  • How to create the documents necessary for their operation’s food safety plan
  • How to successfully host a food safety audit

The course will include lecture, individualized instruction, sample food safety documents to use in your plan, and small group activities.

About the Instructors

Stephen Bird has worked in the agriculture industry for over 20 years and is now a lead instructor for the FDA recognized Preventive Controls for Human Food Training and for the International HACCP Alliance's HACCP Training. He is a consultant for food safety and organic foods and a Preventive Controls Qualified Individual (PCQI). He has owned an organic farm, and has led both inspections and food safety audits. As an award winning instructor, Stephen brings to the classroom a rare combination of how to meet high food safety standards within a NOP compliant environment.

Assisted in his trainings by his wife of 36 years, Caroline Wadlin, M.D., they blend practical agricultural food handling experience and scientific expertise, allowing them to answer questions from the practical daily activities to the scientific understanding of how microbiological issues can be controlled.
