Durante a\u00f1os, tras la aprobaci\u00f3n de la <a       href=\"https:\/\/www.ams.usda.gov\/sites\/default\/files\/media\/Organic%20Foods%20Production%20Act%20of%201990%20%28OFPA%29.pdf\">Ley de producci\u00f3n de alimentos org\u00e1nicos de 1990<\/a>que estableci\u00f3 normas org\u00e1nicas nacionales, los consumidores ten\u00edan que buscar productos org\u00e1nicos en cooperativas de alimentos y mercados de agricultores. En la actualidad, m\u00e1s de la mitad de las ventas de productos org\u00e1nicos se realizan en cadenas de supermercados convencionales, clubes y grandes superficies; Walmart, Costco, Kroger, Target y Safeway son las principales cadenas de supermercados. <a       href=\"https:\/\/www.thebalancesmb.com\/organic-retailers-in-north-america-2011-2538129\">los cinco principales minoristas org\u00e1nicos<\/a>.<\/p>\n<p>Las encuestas muestran que <a       href=\"https:\/\/ota.com\/organic-market-overview\/organic-purchasing\">El 82% de los estadounidenses compra alimentos org\u00e1nicos<\/a>y la disponibilidad ha mejorado. Entonces, \u00bfpor qu\u00e9 las ventas org\u00e1nicas totales ascienden a un mero <a       href=\"https:\/\/www.foodbeverageinsider.com\/market-trends-analysis\/us-organic-sales-grow-record-high-62-billion-2020\">6 por ciento<\/a> de todos los alimentos vendidos en Estados Unidos? Y desde <a       href=\"https:\/\/www.nature.com\/articles\/s41467-017-01410-w\">la agricultura org\u00e1nica tiene muchas ventajas<\/a>Si la UE se compromete a conservar el suelo y el agua y a reducir el uso de productos qu\u00edmicos sint\u00e9ticos, \u00bfpodr\u00e1 aumentar su cuota?<\/p>\n<p>Una cuesti\u00f3n es el precio. Por t\u00e9rmino medio,<a       href=\"https:\/\/www.nature.com\/articles\/s41467-017-01410-w\"> los alimentos org\u00e1nicos cuestan un 20% m\u00e1s<\/a> que los alimentos producidos convencionalmente. Incluso los compradores org\u00e1nicos m\u00e1s ac\u00e9rrimos, como yo, a veces lo obviamos por el precio.<\/p>\n<p>Algunos compradores con presupuestos limitados pueden restringir sus compras org\u00e1nicas a los alimentos que les preocupan especialmente, como frutas y verduras. Los productos org\u00e1nicos conllevan <a       href=\"https:\/\/www.washingtonpost.com\/lifestyle\/food\/the-truth-about-organic-produce-and-pesticides\/2018\/05\/18\/8294296e-5940-11e8-858f-12becb4d6067_story.html\">muchos menos residuos de pesticidas<\/a> que las versiones cultivadas convencionalmente.<\/p>\n<p>El precio importa, pero profundicemos m\u00e1s. Para ello se necesitar\u00e1n m\u00e1s agricultores org\u00e1nicos de los que existen actualmente en Estados Unidos.<\/p>\n<p>Hay algunos<a       href=\"https:\/\/downloads.usda.library.cornell.edu\/usda-esmis\/files\/5712m6524\/tq57pj927\/rx914h75j\/fnlo0221.pdf\">       <\/a><a       href=\"https:\/\/downloads.usda.library.cornell.edu\/usda-esmis\/files\/5712m6524\/tq57pj927\/rx914h75j\/fnlo0221.pdf\">2 millones de explotaciones en Estados Unidos<\/a>. De ellos, <a       href=\"https:\/\/www.nass.usda.gov\/Publications\/Highlights\/2020\/census-organics.pdf\">s\u00f3lo 16.585 son org\u00e1nicos<\/a>-menos del 1%. Ocupan <a       href=\"https:\/\/www.nass.usda.gov\/Publications\/AgCensus\/2017\/Online_Resources\/Organics\/organics_1_001%20_001.pdf\">5,5 millones de acres<\/a>que es una peque\u00f1a fracci\u00f3n del total de tierras agr\u00edcolas de Estados Unidos. Aproximadamente dos tercios de las tierras agr\u00edcolas de Estados Unidos se dedican a la agricultura. <a       href=\"https:\/\/www.bloomberg.com\/graphics\/2018-us-land-use\/\">el cultivo de materias primas para piensos y biocombustibles, como el ma\u00edz y la soja<\/a> en lugar de alimentos para las personas.<\/p>\n<p>En mi opini\u00f3n, convertir m\u00e1s tierras agr\u00edcolas a la producci\u00f3n de alimentos org\u00e1nicos deber\u00eda ser un objetivo nacional. Los agricultores org\u00e1nicos producen alimentos sanos, favorecen la salud del suelo y protegen las cuencas hidrogr\u00e1ficas. Los rumiantes, como las vacas lecheras, cuando se cr\u00edan org\u00e1nicamente,       <a       href=\"https:\/\/www.ams.usda.gov\/sites\/default\/files\/media\/NOP-UnderstandingOrganicPastureRule.pdf\">deben pastar en prados<\/a> durante al menos 120 d\u00edas al a\u00f1o, lo que reduce sus emisiones de metano.<\/p>\n<p>La lista de <a       href=\"https:\/\/rodaleinstitute.org\/science\/farming-systems-trial\/\">beneficios clim\u00e1ticos y medioambientales <\/a>asociado a lo org\u00e1nico es largo. La agricultura org\u00e1nica consume un 45% menos de energ\u00eda que la convencional, principalmente porque no utiliza fertilizantes nitrogenados. Y emite un 40 por ciento menos de gases de efecto invernadero porque los agricultores org\u00e1nicos practican la rotaci\u00f3n de cultivos, utilizan cultivos de cobertura y compostaje, y eliminan los insumos basados en combustibles f\u00f3siles.<\/p>\n<p>La inmensa mayor\u00eda de las explotaciones org\u00e1nicas son peque\u00f1as o medianas, tanto en t\u00e9rminos de ventas brutas como de superficie. Los agricultores org\u00e1nicos son <a       href=\"https:\/\/www.nass.usda.gov\/Publications\/AgCensus\/2017\/Online_Resources\/Organics_Tabulation\/organictab.pdf\">m\u00e1s j\u00f3venes que los agricultores convencionales<\/a>.<\/p>\n<p>Empezar a peque\u00f1a escala tiene sentido para los agricultores principiantes, y las primas de los precios org\u00e1nicos les permiten sobrevivir con parcelas m\u00e1s peque\u00f1as. Pero primero tienen que pasar por un duro periodo de transici\u00f3n de tres a\u00f1os para limpiar la tierra.<\/p>\n<p>Durante este tiempo no pueden etiquetar los productos como org\u00e1nicos, pero deben seguir las normas org\u00e1nicas, lo que incluye renunciar al uso de productos qu\u00edmicos nocivos y aprender a gestionar los procesos del ecosistema. El resultado suele ser una disminuci\u00f3n del rendimiento a corto plazo. Muchos agricultores fracasan por el camino.<\/p>\n<p>El periodo de transici\u00f3n es s\u00f3lo uno de los muchos <a       href=\"https:\/\/www.nass.usda.gov\/Publications\/AgCensus\/2017\/Online_Resources\/Organics\/organics_1_024%20_024.pdf\">retos para los agricultores org\u00e1nicos<\/a>. Dos tercios de los subsidios agr\u00edcolas se destinan a los m\u00e1s ricos. <a       href=\"https:\/\/www.ewg.org\/interactive-maps\/2021-farm-subsidies-ballooned-under-trump\/\">El 10% de las explotaciones m\u00e1s ricas<\/a>.<\/p>\n<p>Nuestro informe recomienda dedicar el 6% del gasto del USDA a apoyar al sector org\u00e1nico, una cifra que refleja su cuota de mercado. Una cuota del 6% de ese presupuesto ser\u00eda de $218 millones para desarrollar cosas como mejores formas de controlar las plagas mediante el uso de depredadores naturales en lugar de pesticidas qu\u00edmicos.<\/p>\n<p>El precio m\u00e1s elevado de los alimentos org\u00e1nicos incluye los costes asociados a pr\u00e1cticas como la renuncia al uso de pesticidas nocivos y la mejora del bienestar animal. Cada vez son m\u00e1s los expertos y profesionales de los sistemas alimentarios que abogan por el uso de una metodolog\u00eda denominada <a       href=\"https:\/\/www.taylorfrancis.com\/books\/oa-edit\/10.4324\/9781003050803\/true-cost-accounting-food-barbara-gemmill-herren-lauren-baker-paula-daniels\">Contabilidad de costes reales<\/a>que, en su opini\u00f3n, revela todos los costes y beneficios de la producci\u00f3n de alimentos.<\/p>\n<p>Seg\u00fan un an\u00e1lisis de la Fundaci\u00f3n Rockefeller, los consumidores estadounidenses gastan $1,1 billones al a\u00f1o en alimentos, pero la <a       href=\"https:\/\/www.rockefellerfoundation.org\/report\/true-cost-of-food-measuring-what-matters-to-transform-the-u-s-food-system\/\">el coste real de esa comida es de $3,2 billones<\/a> cuando se tienen en cuenta todos los impactos, como la contaminaci\u00f3n del agua y la salud de los trabajadores agr\u00edcolas.
