Maybe you’ve heard of the “first pancake principle,” which allows for a little messiness and failure the first time you try a new thing. It’s based on the idea that the first pancake of every batch is the worst one.  

Good news! With these oven-baked pancakes, there’s no “first pancake” since every single one comes out delicious. They’re sweet without tasting greasy or oily. (Plus, you’re far less likely to fill your kitchen with smoke the way frying-pan pancakes sometimes can.) Treat yourself and enjoy! 

 

Organic Whole Wheat Oven-Baked Blueberry Chocolate Pancakes 

This recipe makes about 24 silver-dollar pancakes (each one is about two inches across). 

Time:  25 minutes start to finish 
Ingredients: 
¾ cup organic whole wheat flour 
¾ cup organic all-purpose flour 
1 tablespoon organic sugar 
1 teaspoon organic baking powder* 
¼ teaspoon salt** 
3 tablespoons organic butter, melted 
2 cups organic almond milk 
1 organic egg, beaten 
 
Stir together dry ingredients (flour, sugar, baking powder, salt) in one bowl. 
Stir together wet ingredients (melted butter, beaten egg, almond milk) in another bowl. 
Add wet ingredients to dry ingredients and stir until smooth.  
For baking, use a muffin tin to ensure your pancakes are perfectly round and regular. Non-stick ceramic-coated tins work great for this! 
Add one large spoonful of batter for each pancake.  
Add your desired toppings to each pancake. (This step is fun for kids who like to create smiley faces!) In this video, we add frozen organic blueberries and organic dark chocolate chips. You can also add chopped organic bananas, organic strawberries, organic walnuts, etc. Let us know if you find a winning combination! 
Preheat your oven to 400 degrees Fahrenheit. Bake for 12 minutes. 
Garnish with organic maple syrup and a dash of organic cinnamon.  
Yum! 

* Did you know baking powder can be organic? That’s because it contains ingredients that come from corn. 

** Since salt is a mineral, it does not have a USDA organic designation. Just use regular salt and enjoy!
